Brown rice and tofu salad with orange sesame dressing

This dish is a vegetarian protein bomb! Beans, brown rice and tofu – a combo that is hard to beat! Lots of flavor and great taste!

Ingredients:

Dressing:

  • 1/2 cup extra virgin olive oil
  • 4 tsp toasted sesame oil
  • 1/3 cup orange juice
  • 1/3 cup rice vinegar
  • 1 small fresh jalapeno pepper, seeded and minced
  • 1 tsp minced peeled fresh ginger
  • 1 tsp minced garlic

Instructions: Shake well together in a tight jar.

Salad:

  • 4 cups warm cooked brown basmati rice
  • One 10 1/2-oz package extra-firm tofu, pressed if desired, and cut into 3/4-inch cubes (look for organic, non-GMO variety)
  • 3 cups cooked adzuki beans (about 1 cup dried), rinsed and drained if canned (super high fiber and a variety that is extremely easy to digest)
  • 1/2 cup chopped red onions
  • 1 cup chopped bell peppers, red, yellow or green
  • 1/4 cup finely chopped fresh cilantro

What you need to do:

Chill and combine the above ingredients in a large bowl. Pour dressing over the mixture and toss well to coat. Season with salt and pepper to taste. Serve in lettuce leaves or by itself. Sprinkle with toasted sesame seeds if desired.
